Fruit n Nut Cake

I am into baking for a year now, and whenever I bake, I discover new methods & tricks. To reach the level of perfection, we need to have a lot of practice. The most essential factor for baking a cake is binding, but at the same time preserving the necessary texture and taste is important. For that, use of the right ingredients and quantity should be known. One should always try to understand the importance and role of each element used in baking. Nowadays, we got different mediums to support and enhance our culinary skills, so we just need to perceive it from the right source. As the baking process itself requires attentiveness and time, it can be an excellent stress-buster option.


Plum cakes are my personal favourites out of all. As they are easy to bake, the process is less messy, unlike any other cream or cheesecakes and goes well with any beverages. For a healthier version of plum cake, one can replace a few ingredients like the use of almond flour instead of regular all-purpose flour, maple syrup or honey with sugar.


This time I thought of experimenting plum cake, as I had a lot of different fruits in my fridge and wanted to use them all at once, so ended up baking a fruit n nut cake. A small slice of this cake is filling as it has a lot of fruits and nuts in it, so it can be a great breakfast alternative. I have used Banana, Mango, Blackberry and Raspberry in it. And when we are adding these many fruits in our cake, it is essential to get the right consistency. The texture of the fruits mix shouldn’t be runny; it should be more like Smoothie. So here is my recipe of fruit n nut cake.



I have split the ingredients into different sets for convenient readability.

Ingredients

Set 1

Banana - 3 medium sizes

Raspberries -½ cup

BlackBerries -½ cup

Mango- small pieces less than ½ cup

Honey / Maple syrup - 1 tbsp.

Instant Coffee Powder - 1 tsp.

Set 2

All-purpose flour - 1 cup

Wheat flour ½ cup

Sugar 1 Cup

Baking Soda - 1 tsp.

Baking Powder - 1 tsp.

Salt - ½ tsp.

Set 3

Milk - ½ cup

Vegetable oil - ½ cup

Vanilla Essence - 1 tsp.


Nuts - 1 Cup


Process:

Step1: Preheat the oven to 350 F

Step2: Grease your baking container with butter or oil

Step3: Place parchment paper in the base for easy removal for cake

Step4: Blend all the ingredients of set 1 and keep aside

Step5: Sieve and whisk well all the dry ingredients of set 2

Step6: Add the wet ingredients of set 3 to the dry mix and whisk well

Step7: Add the fruits Smoothie to the above mix and whisk them

Step8: At the end add nuts to the cake mix and pour into the baking container

Step9: Bake for 45-50 minutes
