Caramel Pudding

Berhampur, Odisha is my hometown and its famous for three things morning breakfast, street food & silk saris. But coming to caramel pudding only name that comes to my mind is ‘Girijja Restaurant’ of Berhampur, where I was introduced to these caramel pudding. Its one of the oldest restaurant of our place, so locals choose taste over ambience. Other than pudding one can also try their Chicken Pakora.

Looking at the beautiful caramel crust on the top and soft pudding within, I used to think making it must be very difficult, until I started baking. But now I can bet you, it is one of the easiest dessert to bake with minimum ingredients. But not to forget I still love to have Girijja Restaurant's Caramel Pudding because it is one of my childhood memories and sometimes it’s good to relive them. Do try pudding in this restaurant if you ever visit Berhampur, as its one of the best thing to have. As restaurant is not sophisticated, if your visiting with your family better opt for to go.


Recipe below is for 4 people


Ingredients:


Sugar - 1 Cup

Milk -  2 Cups

Sugar for Caramel - 5 tbsp

Eggs - 4

Vanilla Essence-1 Tsp


Process:


Step 1: Pre-heat oven to 350 F

Step 2: Heat pan and add sugar to caramelise

Step 3: Once sugar melts and turns brown pour it to your baking bowl for the base

Step 4: Spread it and keep it aside to cool

Step 5: Blend sugar and eggs

Step 6: Add milk to the above mixture

Step 7: Add vanilla essence & give a stir to the mixture

Step 8: Pour the mixture to your baking bowl on top of caramel layer

Step 9: Bake it for 45 Minutes

Step 10: Once done let it cool till it comes to room temperature

Step 11: Leave it in freeze for 6-8 hours or over night

Step 12: Loosen the sides and remove it by placing the plate on top of dessert bowl and hold tightly, turn the dish upside down. Shake the bowl gently to loosen custard


Ready to serve and never forget to click one good picture. And why not, such small moments needs to be captured and cherished. As life is all about memories.
